Countertop units are free-standing boiling water heaters that have drip trays to collect minor spillages. On some models the drip tray is plumbed directly to the waste. Hot water drawn off at the tap is automatically replaced by incoming water which is pre-heated to near boiling point to prevent the temperature of the stored water from being lowered. The availability of hot water is essentially determined by the storage capacity of the water heater which should be large enough to meet any peaks in demand. Storage capacity may be estimated by multiplying the number of people who may wish to use the unit at one time by the size of the cups (typically 167mL) or mugs (250mL) used. So if ten people with 250mL mugs are to use the unit at the same time the unit capacity must not be less than 10 x 250mL or 2.5L. If cafétierres or tea pots are to be filled from the unit then the height of the tap needs to be sufficiently high to allow ready access.
